Chicken Schnitzel

COOK TIME: 8 MIN | SERVES: 4

Ingredients:

4 chicken breast cutlets

Fine salt

Ground black pepper

1 large egg, beaten

½ cup breadcrumbs

2 tbsp Romano cheese, grated

Olive oil cooking spray

6 cups baby spinach

1 tbsp olive oil

1 tbsp lime juice, plus 1 lime cut into wedges for serving

Shaved Romano cheese

Directions:

Preheat the air fryer to 400°F, or 200°C.

Place 1 chicken breast between two sheets of plastic wrap. Use a meat mallet or rolling pin to pound the breast until it is about ¼-inch thick. Repeat with the remaining chicken breasts. Season the chicken with ½ tsp fine salt, and ground black pepper to taste.

Place the beaten egg in a shallow, medium-sized bowl. In a separate bowl, add together the breadcrumbs and grated Romano cheese, and mix to combine. Dip the chicken breasts in the beaten egg, then in the breadcrumb mixture, until fully coated. Shake off any excess breadcrumbs, and place on a work surface. Spray both sides of the schnitzels with olive oil cooking spray.

Working in batches, place the coated chicken schnitzels in the air fryer basket. Cook for 8 minutes, flipping half way, until golden brown and fully cooked. Place the baby spinach in a large mixing bowl, and toss with olive oil, lime juice, ¼ tsp fine salt, and ground black pepper to taste.

Place a chicken schnitzel on each plate, and top with 1½ cups seasoned baby spinach. Serve with a lime wedge, and top with some shaved Romano cheese.
